Almost all covers done by Santana between 1968 and 1969. They always added something special to the songs. I'm thinking mostly about Conquistadores (by Chico Hamilton), Fried Neckbones (by Willie Bobo), Evil Ways (by Sonny Henry of Willie Bobo's band), Black Magic Woman (by Peter Green), Gypsy Queen (by Gabor Szabo), Oye Como Va (by Tito Puente), Jungle Strut (by Gene Ammons), A Love Supreme (Acknowledgement) (by John Coltrane), Promise Of A Fisherman (by Dorival Caymmi), She's Not There (by Zombies).

Jimi Hendrix - All Along The Watchtower (by Bob Dylan), IMO the best cover ever.

Hurt by Johnny Cash, originally Nine inch nails.
The long and winding road by the Langley Schools Music Project sung by schoolgirl Joy Jackson, originally The Beatles.
Jugband blues by John Frusciante live, according to him "a song by Syd Barrett".
